One Pan Shrimp Scampi Orzo

5 tablespoons butter

1-2 garlic cloves minced

1lb shrimp peeled deveined

Salt and pepper

2 tablespoons olive oil

1 1/2 cups orzo

1/3 c white wine

2-3 cups water or seafood stock or a mixture

3 tablespoons chopped parsley

Lemon juice and zest

Add the shrimp to a bowl and drizzle with the olive oil and season with salt and pepper. Let sit for a few minutes or up to an hour.

Melt 4 tablespoons of the butter in a large skillet and add the garlic cloves. When the garlic sizzles add the shrimp and cook a few minutes on each side. The exact time will depend on the size of the shrimp you don’t want to overcook since they will be warmed again with the orzo. You want them crisp tender. Whe the shrimp are cooked remove them from the skillet and set aside. Add the orzo to the skillet and stir until coated. Add the wine and let it bubble and evaporate. Add 1 cup of water or stock and cover the skillet. Keep it on a simmer for about 5 minutes. Remove lid and stir adding more liquid as needed until creamy and tender. Season with salt and pepper and add remaining tablespoon of butter and about 1 tablespoon of lemon juice. Add the shrimp back to the skillet along with parsley and lemon zest.
