I thought that I would share a recipe that my mother had stashed in her recipe drawer. Yes she had a recipe drawer. a whole drawer in the kitchen where she would cut out recipes to try and they would just end up in the drawer. I don’t think that she even knew how many recipes she had in that drawer.
English Custard
5 egg yolks
2/3cup sugar
2 cups milk
1/8 teaspoon salt
1 teaspoon vanilla extract
Place the yolks in a saucepan and add the sugar. Beat with a wire whisk until thick and lemon colored
Bring the milk to almost a boil Gradually add the milk to the yolk mixture, beating constantly. Use a wooden spoon and stir constantly making sure the the spoon touches the bottom all over.
Cook, cook stirring and adding the salt and vanilla. Cool until the mixture has a custard-like consistency and coats the sides of the spoon. DO NOT let it BOIL
Remove the sauce from the stove, still stirring. Set the saucepan in a basin of cold water to reduce the temperature. Let the sauce cool to room temperature. Chill for an hour or more
