I have not been happy about where this blog has been going. just photos and no real explanation of what or where. I want to continue showing you photos, but also add in some other things as well, such as some DIY projects, or sharing a recipe with you.
I am an artist/ crafty person. and I would love to share some of the things that I know and learn. I would also like to do this more on a daily basis.. So with that in mind:
. I made some marmalade last week. and even though it did not really set up, the taste is great, and I have been putting in on vanilla ice cream.
Watermelon Ginger Marmalade
1 lemon
1 tablespoon, minced fresh ginger
8 cuts Peeled, seeded, cubed watermelon
2 1/2 cups sugar
Zest the lemon ( cut the peel off without getting any of the white pith with it.)
Squeeze lemon, reserving juice. Chop the pulp
Place the lemon pulp and ginger on a square of cheesecloth and tie.
Cook Lemon zest, watermelon and spice bag in a non aluminum saucepan, over 30 minutes on medium heat, stirring occasionally. Then add sugar, lemon juice and bring to a boil over medium high heat. Boil, stirring often, for 10 minutes or until thicken. Discard spice bag.
Pour into hot jars, filling to 1/2 inch from the top. Clean rims and cover. Process in a boiling water bath for 10 minutes

The marmalade sounds good and I bet it IS good on ice cream!
