Tuesdays troubles

So yesterday I told you that I had made Sweet Pickle Relish and that I would share the recipe.   Here it is.

Sweet Pickle Relish

  • 4 cups finely chopped cucumbers
  • 2 cups finely chopped peppers seeds and membrane removed
  • 2 cups finely chopped sweet onions
  • 1/4 cup pickling salt
  • 3 1/2 cups sugar
  • 2 cups of cider Vinegar
  • 1 tablespoon mustard seed
  • 1 table spoon celery seed

combine the cucumbers, peppers and onions in a large bowl, and add the pickling salt.  Stir until well combined.  Add ice and cold water, and allow to sit for 2-3 hours.

Pour into a colander and drain well,  rinsing as necessary.  you may want to squeeze the excess water out as well. ( I used a piece of cheesecloth to line the colander with and then was able to squeeze most of the liquid out.)

Combine the sugar and the cider Vinegar and bring to a boil,Add the mustard seed,and celery seed,  add the cucumber mixture and simmer for 10 minutes.  Turn off the heat and spoon the mixture into the canning jars.  Hand tighten the lids

Place the jars into a boiling water bath for 15 minutes.  Remove and allow to cool.
