Puff Pastry Pecan Pie Bites

Flaky puff pastry cups filled with a gooey, caramel-sweet pecan center — these cozy little bites capture all the warmth of classic pecan pie in a perfectly shareable size.
Main Ingredients
1 sheet puff pastry, thawed
1 cup pecans, chopped
¾ cup brown sugar, packed
¼ cup corn syrup
3 tbsp unsalted butter, melted
2 large eggs
1 tsp vanilla extract
½ tsp salt
Directions
Heat the oven to 375°F (190°C) and lightly grease a mini muffin pan.
Roll out the puff pastry on a lightly floured surface until smooth and even.
Cut the pastry into small squares and gently press each one into the muffin wells to form little cups.
In a bowl, stir together the chopped pecans, brown sugar, corn syrup, melted butter, eggs, vanilla, and salt until glossy and well combined.
Spoon the pecan filling into each pastry cup, filling most of the way while leaving a little space at the top.
Bake until the pastry is puffed and golden and the filling looks set and slightly bubbly.
Let the bites cool briefly in the pan so they firm up, then remove gently.
Serve warm or at room temperature for the coziest pecan-pie flavor.
