Ginger Molasses Christmas Cookies

Ingredients:
- 3 cups all-purpose flour
- 1 tablespoon ground ginger
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1/4 cup molasses
- 1 teaspoon vanilla extract
- Additional granulated sugar for rolling
Directions:
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together the flour, ground ginger, cinnamon, cloves, nutmeg, baking soda, and salt until well combined.
- In a large mixing bowl, beat the softened butter and 1 cup of sugar together until light and fluffy, about 3-5 minutes.
- Add the egg, molasses, and vanilla extract to the butter mixture, mixing until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
- Shape the dough into 1-inch balls and roll each ball in granulated sugar.
- Place the cookie balls about 2 inches apart on the prepared baking sheets.
- Bake for 8-10 minutes, or until the cookies are set and the edges are slightly cracked.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
