Ginger Molasses Christmas Cookies

Ingredients:

  • 3 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • Additional granulated sugar for rolling

Directions:

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, ground ginger, cinnamon, cloves, nutmeg, baking soda, and salt until well combined.
  3. In a large mixing bowl, beat the softened butter and 1 cup of sugar together until light and fluffy, about 3-5 minutes.
  4. Add the egg, molasses, and vanilla extract to the butter mixture, mixing until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
  6. Shape the dough into 1-inch balls and roll each ball in granulated sugar.
  7. Place the cookie balls about 2 inches apart on the prepared baking sheets.
  8. Bake for 8-10 minutes, or until the cookies are set and the edges are slightly cracked.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
