Moroccan Carrot and Chickpea Salad

Ingredients:
1/2 cup olive oil
1 cup chickpeas, cooked and drained
2 large carrots, grated
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp paprika
1/4 tsp cinnamon
1/4 tsp black pepper
1/2 tsp salt
2 tbsp lemon juice
1 tbsp honey
2 tbsp fresh parsley, chopped
2 tbsp fresh cilantro, chopped
1/4 cup raisins (optional)
Instructions:
1. In a large mixing bowl, combine the grated carrots and chickpeas.
2. In a small bowl, whisk together the olive oil, lemon juice, honey, cumin, coriander, paprika, cinnamon, black pepper, and salt to make the dressing.
3. Pour the dressing over the carrot and chickpea mixture. Toss well to coat evenly.
4. Add the chopped parsley, cilantro, and raisins (if using). Mix gently.
5. Let the salad sit for at least 15 minutes to allow the flavors to meld.
6. Serve chilled or at room temperature.
