20 Minute Mediterranean Baked Cod

NGREDIENTS
1 pint cherry tomatoes, halved
½ cup Mezzetta® Sliced Greek Kalamata Olives
½ cup Mezzetta® Imported Spanish Queen Olives
1 tablespoon Mezzetta® Imported Non-Pareil Capers
6 garlic cloves, sliced
4 sprigs fresh oregano, leaves picked
½ tsp red pepper flakes, optional
Zest and juice of 1 lemon
¼ cup dry white wine
4 (6 ounce) cod fillets
Salt and pepper, to taste
¼ cup Mezzetta® Sauté Extra Virgin Olive Oil
¼ cup fresh parsley, minced
INSTRUCTIONS

  1. Preheat the Oven: Set your oven to 400°F.
  2. In a large oven-safe baking dish, add the cherry tomatoes, olives, capers, garlic, oregano, red pepper flakes, lemon zest, and white wine.
  3. Pat the cod fillets dry and season both sides with salt and black pepper. Nestle them into the tomato-olive mixture. Drizzle with the olive oil and squeeze the lemon juice over the top.
  4. Transfer the dish to the oven and bake for 12-15 minutes, or until the cod flakes easily with a fork.
  5. Finish & Serve: Sprinkle with fresh parsley and serve warm with crusty bread or over couscous for a complete meal.
