20 Minute Mediterranean Baked Cod

NGREDIENTS
1 pint cherry tomatoes, halved
½ cup Mezzetta® Sliced Greek Kalamata Olives
½ cup Mezzetta® Imported Spanish Queen Olives
1 tablespoon Mezzetta® Imported Non-Pareil Capers
6 garlic cloves, sliced
4 sprigs fresh oregano, leaves picked
½ tsp red pepper flakes, optional
Zest and juice of 1 lemon
¼ cup dry white wine
4 (6 ounce) cod fillets
Salt and pepper, to taste
¼ cup Mezzetta® Sauté Extra Virgin Olive Oil
¼ cup fresh parsley, minced
INSTRUCTIONS
- Preheat the Oven: Set your oven to 400°F.
- In a large oven-safe baking dish, add the cherry tomatoes, olives, capers, garlic, oregano, red pepper flakes, lemon zest, and white wine.
- Pat the cod fillets dry and season both sides with salt and black pepper. Nestle them into the tomato-olive mixture. Drizzle with the olive oil and squeeze the lemon juice over the top.
- Transfer the dish to the oven and bake for 12-15 minutes, or until the cod flakes easily with a fork.
- Finish & Serve: Sprinkle with fresh parsley and serve warm with crusty bread or over couscous for a complete meal.
