Beefy Jalapeno Corn Bake

Spicy Beef and Jalapeno Cornbread Casserole

Ingredients:

1 pound lean ground beef

2 eggs

1 can (14 oz) cream-style corn

1 cup milk

1/2 cup vegetable oil

1 cup cornmeal

3 tablespoons all-purpose flour

1-1/2 teaspoons baking powder

3/4 teaspoon salt

4 cups (16 oz.) shredded Cheddar cheese, divided

1 medium onion, chopped

4 jalapeno peppers, seeded and chopped

Directions:

Preheat the oven to 350° F. Grease a 13x9x2-inch baking pan and set aside.

In a pan, cook and crumble the beef until no longer pink. Drain and set aside.

In a bowl, beat eggs, corn, milk, and oil. Add cornmeal, flour, baking powder, and salt. Mix well.

Pour half of the batter into the prepared pan. Sprinkle with 2 cups of cheese.

Top with beef, onions, and jalapenos. Sprinkle with remaining cheese.

Pour the remaining batter over the top, using the back of a spoon to spread it to the edges.

Bake, uncovered, for 55-60 minutes or until a toothpick inserted near the center tests clean. Serve hot.
