Crab and Shrimp Seafood Bisque

Ingredients:

1/4 cup butter

• 1 onion, chopped

• 2 cloves garlic, minced

• 1/4 cup all-purpose flour

• 4 cups seafood stock

• 1 cup heavy cream

• 1/2 pound lump crabmeat

• 1/2 pound shrimp, peeled and deveined

• 2 tablespoons sherry (optional)

• Salt and pepper to taste

• Fresh parsley for garnish (optional)

Directions:

1. In a large pot, melt the butter over medium heat.

2. Add the chopped onion and minced garlic, and sauté until softened, about 5 minutes.

3. Sprinkle the flour over the onions and garlic, and cook for an additional 2 minutes, stirring constantly.

4. Gradually whisk in the seafood stock until smooth.

5. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.

6. Stir in the heavy cream, lump crabmeat, and shrimp.

7. Simmer for another 5-7 minutes, or until the shrimp are pink and cooked through.

8. Stir in the sherry, if using, and season with salt and pepper to taste.

9. Ladle the bisque into bowls, garnish with fresh parsley if desired, and serve hot.
